Their success of these beans relies on picking them when they are their peak of ripeness. This coffee produces a brew with a bright and sweet acidity – excellent in those medium and mid dark roasts. Cabernet-like acidity and black cherry-like brew that saturates the profile from bottom notes to top off a complex-yet-smooth flavour and sweet finish.
